Blueberry Pancakes
  1. Mix the flour and baking powder and set aside

  2. In another bowl whisk the egg, milk, maple syrup, and melted butter

  3. Pour the wet ingredients into the dry ingredients and whisk just until combined (the batter will be lumpy)

  4. Fold in the blueberries and let the batter rest for 5 minutes

  5. Cook pancakes on a buttered skillet over medium heat until golden on both sides

  6. Serve as breakfast sandwiches with bacon, egg, and cheese, or fill with desired toppings
