potato candy
  1. Start with a whole potato. Skin it, boil it, mash it. (One potato goes a long way so I recommend starting small and adding more if you need more candy.)

  2. Add powdered sugar until it forms a dough. (The potato retains a lot of water so you'll see it start to liquify as you begin adding the sugar. Keep adding. It'll get there, I promise!)

  3. Transfer to surface and roll out. (Make sure you add powdered sugar to your work surface as well as your roller to keep from sticking.)

  4. Spread peanut butter. (I recommend leaving the edge across from you clean as your peanut butter will push towards it anyway, but go all the way to the other three edges.)

  5. Roll into a log. (I use a spatula that's also rubbed in powdered sugar to help loosen the dough from the work surface and help me keep my rolls tight.)

  6. Refrigerate until solid THEN slice.

  7. Gorge yourself until you're sick 😂
