Heat Olive Oil: In a large pan over medium-high heat, add the olive oil.
Cook Chicken and Sausage: Add the chicken pieces and smoked sausage to the pan. Sprinkle with Cajun seasoning, and cook until the chicken is browned and cooked through, about 5-7 minutes. Remove chicken and sausage from the pan and set aside.
Sauté Vegetables: In the same pan, add the chopped onion and bell pepper. Cook until the onion is translucent. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
Add Rice and Broth: Add the rice to the pan and stir for a minute to toast it lightly. Pour in the chicken broth and diced tomatoes (with their juices), and bring the mixture to a simmer.
Combine Ingredients: Add the chicken and sausage back into the pan. Stir to combine all ingredients well.
Simmer: Cover the pan, reduce the heat to low, and let it simmer for 20-25 minutes, or until the rice is cooked and has absorbed most of the liquid. Stir occasionally to prevent the rice from sticking to the pan.
Season and Serve: Taste and adjust seasoning with salt and pepper as needed. Garnish with chopped green onions or parsley.
