Pb Protein Cottage Cheese Bars
  1. Blend the cottage cheese until completely smooth.

  2. In a bowl, mix the blended cottage cheese, peanut butter, maple syrup, and vanilla extract.

  3. Add in the almond flour, protein powder, and salt, and mix until a thick dough forms. It should be soft but hold its shape when pressed. If the mixture is too wet, add a bit more almond flour or protein powder until it reaches a thick, spreadable consistency.

  4. Press the mixture evenly into a lined pan or container.

  5. Melt the chocolate chips with coconut oil and spread over the top.

  6. Place in the fridge or freezer for 20–30 minutes until set, then slice into squares.

  7. Store in the fridge and enjoy throughout the week.
