Tomato Confit
  1. Take your struggling tomatoes and toss them into the smallest pan that allows them to sit in an even layer.

  2. Pour in enough olive oil to cover half way*, add an optional big pinch of salt, then cook in an oven at 300 degrees until they've lost a decent amount of their water content and are fully cooked, stirring occasionally.

  3. Store them in a jar submerged in their oil.
