Grandfather's Stir-Fried Soybean Sprouts & Yellow Chives

  1. Early in the day, wash the bean sprouts and yellow chives in several changes of cold water and drain thoroughly in a colander until dry to the touch.

  2. Remove the tail end from the bean sprouts. Cut the yellow chives into 2-inch lengths. In a small bowl, combine the soy sauce, salt, and sugar; set aside.

  3. Heat a 14-inch flat-bottomed wok or skillet over high heat until hot but not smoking. Add the vegetable oil and ginger, and stir-fry 30 seconds. Add the bean sprouts and stir-fry another 30 seconds.

  4. Add the soy sauce mixture and yellow chives, and stir-fry until combined. Serve immediately with cilantro sprigs.
