Whisk warm water, yeast, and sugar in a bowl and let sit for 5 minutes until bubbly
Add olive oil, salt, garlic powder, and oregano to the mixture
Add half of the flour and mix, then gradually add the remaining flour
Knead dough for 5 minutes, adding flour 1 tablespoon at a time if needed
Cover dough and let rise in a warm area for 1-2 hours until doubled in size
Shape dough into a log and cut into strips
Lengthen each strip and tie into a knot
Place knots on baking sheet and let rest for 30-45 minutes
Melt butter and add minced garlic, Italian seasoning, and salt
Use ¾ of the garlic butter mixture on the knots before baking
Optional: brush knots with beaten egg for golden color
Bake at 400°F for 20-23 minutes
Top baked knots with remaining garlic butter mixture, Parmesan, and parsley
