Add 8-10 skin-on chicken thighs to a pot.
Add 1 cup soy sauce, ½ cup dark soy sauce, ½ cup cooking wine, ½ cup brown sugar, 4 slices ginger, 4 garlic cloves, and 3 green onions.
You can also add aromatics like a cinnamon stick and bay leaf.
You can let it marinate overnight if you want to make it even better.
Add 4 cups water and simmer the chicken for 25-30 minutes.
Turn the heat off and let it sit in the pot covered for 5 minutes.
Eat with rice and a vegetable.
