Season the chicken thighs generously with a 50/50 mix of kosher salt and black pepper on both sides.
Place the seasoned chicken thighs in a smoker preheated to 200-225°F.
Smoke the chicken for 1hr 5min , adding wood as needed to maintain the smoke. Target temp. 135°F
Increase the smoker temperature to 325-350°F, place the chicken skin side down in the hot zone to crisp the skin, about 30 minutes. About 190°F
Serve the juicy, smoky chicken thighs.
