Prep the ginger, lemongrass, and scallion.
Set up a steamer. Place chicken in the steamer and top with the ginger, lemongrass, and scallion.
Cover and steam for 15-20 minutes.
After steaming, remove the aromatics and save the chicken broth. Shred the chicken.
To make the ginger scallion oil, cut up green onion, ginger, garlic then heat up the oil over a pot.
Pour the heated oil over the veggies and add in seasonings. Then add in the chicken broth from the steaming.
Pour the sauce over the chicken and serve with rice.
