Nana's Old School Scottish Shortbread
  1. Preheat oven to 140°C.

  2. Mix the plain flour, cornflour, rice flour and sugar together.

  3. Add the softened salted butter and rub into the dry ingredients by hand until fully combined.

  4. Bring the mixture together — it should hold its shape when pressed.

  5. Press firmly into your baking dish and smooth the top.

  6. Bake low and slow for around 90 minutes until set and only slightly golden (you want it to stay pale).

  7. While still warm, cut into thick fingers using a sharp knife and prick each piece with a fork.

  8. Sprinkle with sugar and leave in the dish until completely cooled.
