Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
In a large bowl, whisk together 1 cup of almond flour, ½ cup of unsweetened cocoa powder, ½ cup of stevia or monk fruit sweetener, ¼ teaspoon of salt, and ½ teaspoon of baking soda.
In another bowl, beat 2 large eggs, then mix in ⅓ cup of melted coconut oil, ¼ cup of Greek yogurt (or unsweetened applesauce), and 1 teaspoon of vanilla extract.
Gradually combine the wet and dry ingredients until just mixed, folding in ½ cup of dark chocolate chips if desired.
Spread the batter evenly in the prepared pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Cool completely in the pan before cutting into squares.
