The Best Gluten Free Invisible Apple Cake (moist & Delicious)
  1. Preheat your oven to 350 degrees F.

  2. Line a 9x5 loaf pan with parchment paper.

  3. In a large bowl, quickly whisk together the eggs, coconut milk, coconut oil, and vanilla until smooth.

  4. In a separate bowl, combine all of your dry ingredients: flour, cinnamon, baking powder, and salt.

  5. Gradually add the dry ingredients into the wet mixture, whisking until you have a smooth, creamy cake batter.

  6. Peel, core, and slice your apples REALLY THIN preferably with a mandoline. Add them into the bowl and mix to coat all in the batter.

  7. Transfer the apples only to the pan, gently flattening out. Pour on the remaining batter to the top of the loaf pan evenly.

  8. Sprinkle the sliced or flaked almonds evenly over the top of the cake batter if using them.

  9. Transfer to the oven and bake for 50-60 minutes or until the top is golden brown.

  10. Allow to set in pan for at least 30 minutes before transferring to a wire rack to cool.
