Rice Paper Pajun-ish
  1. Dip 2 rice paper sheets into a beaten whole egg until soft and pliable. Set aside.

  2. In a bowl, mix 1 whole egg, 4 oz cooked lean thinly sliced beef, enoki mushrooms, scallions, 1 tsp cornstarch, salt, and pepper.

  3. Lay one rice paper sheet flat and spread the filling evenly on top.

  4. Cover with the second rice paper sheet and press gently to seal.

  5. Heat a lightly oiled pan over medium heat.

  6. Pan fry until golden and crispy on both sides, flipping carefully.

  7. Serve hot with hoisin sauce or any sauce you like.
