Egyptian Cucumber & Tomato Salad (salata Baladi)
  1. Dice cucumbers and tomatoes into small pieces.

  2. In a large bowl add diced tomatoes, cucumbers, Italian flat leaf parsley, vinegar, lime juice, (red onion and jalapeño, if using), salt, and pepper.

  3. Rub the dried mint leaves in the palm of a hand to release the oils, and add them to the salad.

  4. Toss together until thoroughly combined.

  5. Season as desired, and serve cold.
