Pre-heat your oven to 200C / 392F.
Line a large baking tray with parchment paper.
Lay a round plate onto the parchment and draw a line around it to mark the shape.
Drizzle olive oil onto the baking parchment, then some honey. Season with salt, pepper, and fresh thyme.
Lay a few onion slices onto the oil, followed by the beetroot wedges. Crumble some goats cheese on top and season.
Roll out the puff pastry sheet and cut out a round using the same plate. Lay it over the top and brush with beaten egg.
Seal the edges with a spoon and cross-hatch the top with a knife.
Bake for 35 mins or until the pastry is darkly golden.
Allow to rest for 5 mins, then carefully flip it over.
Crumble more goats cheese on top and season with salt and pepper.
