Chicken Noodle Soup
  1. Simmer chicken thigh, onion, ginger, salt, and mirin for 1.5 hours on low heat until the chicken meat is tender and easy to shred

  2. Shred the cooked chicken meat and mix with spring onion, coriander, soy sauce, and sesame oil, seasoning to taste

  3. Boil noodles of choice together with vegetables and egg in chicken stock until cooked

  4. Season to taste with salt

  5. Garnish with tofu and serve
