Preheat to 350°F (175°C). Line baking sheets with parchment paper.
Beat butter, brown sugar, and white sugar until fluffy.
Mix in egg and vanilla until smooth.
Whisk flour, cinnamon, baking soda, and salt; add to wet mix.
Flatten dough, place caramel candy, roll into a ball.
Roll each dough ball in sugar-cinnamon mixture.
Bake 10–12 minutes until golden around edges.
Let rest on pan 5 minutes, then transfer to wire rack.
