Chiu Chow Noodles in Sesame Sauce

  1. Blanch the noodles in a large pan of boiling salted water for 2 minutes, or until they are barely soft.

  2. Drain the noodles well and toss immediately with the sesame oil.

  3. Arrange the noodles on a serving platter.

  4. Mix all the sauce ingredients in a small pan and season with ½ teaspoon of salt and a touch of white pepper.

  5. Bring the sauce to a simmer.

  6. Allow the sauce to cool slightly and toss with the noodles.

  7. Serve at once.
