Chilli & Cornbread

  1. Cook diced onions on a medium heat in oil until soft. Add finely chopped garlic and mince. Cook until meat is browned then add the spices, stir and cook for a further minute.

  2. Add the tinned beans and tomatoes. Mix well and leave to simmer uncovered for at least 20 minutes. Add salt and pepper to taste and extra chilli if you like spice.

  3. Meanwhile, make cornbread. Melt butter in the microwave and mix with the creamed corn, milk and egg with a fork. Add cornmeal, baking powder, salt and cheese. Mix to form a wet dough.

  4. Decant mince mixture - about one ladle per serving - into baking dish(es). Spread the cornbread mixture on top, aiming for about 1cm thickness. Don't worry if it isn't spread evenly - it will fluff up when cooked. It looks a bit like scrambled eggs at this stage haha but this is how it's meant to look!

  5. Add extra cheese on top if you like, then bake uncovered for 30-40 minutes, until the topping is cooked.
