Preheat the oven to 150˚C. Line two baking trays with baking paper. Place the oats, coconut, flour and sugar in a large bowl and stir to combine.
Place the butter and golden syrup in a small saucepan and stir over low heat until the butter is melted. Place the boiling water and bicarbonate of soda in a small bowl or cup and stir to combine, then add to the melted butter and golden syrup mixture. It will froth
Pour the wet mixture into the dry mixture and stir with a wooden spoon until well combined. Roll heaped teaspoons of mixture into balls and place on the baking trays, leaving room for spreading.
Bake for 16 minutes. Let them stand on the tray for 1min before transferring to a cooling rack. Once completely cool, store in an airtight container.
