Shepherd's Pie
  1. Brown 1.2kg lamb mince in batches for maximum caramelisation and set aside

  2. In the same pan, cook diced onions, carrots and celery stalks until golden

  3. Add diced garlic cloves, thyme, rosemary, salt and pepper

  4. Stir in tomato paste and cook for 2 minutes

  5. Deglaze the pan with red wine

  6. Add lamb back to the pan with stock and simmer for 1 hour

  7. Remove from heat and stir through frozen peas and Worcestershire sauce

  8. Boil potatoes and rice until smooth

  9. Stir in butter, cream, egg yolks and cheddar cheese, season to taste

  10. Pipe the mashed potato on top of the filling in a stainless steel pot

  11. Top with extra cheddar cheese

  12. Bake for approximately 25 minutes until golden brown and heated through
