Vietnamese Banh Flan
  1. Cook sugar + water to deep amber caramel.

  2. Pour thin layer into tin or 6 ramekins

  3. Warm milk + condensed milk until steaming.

  4. Gently whisk eggs, yolks, vanilla, salt.

  5. Slowly combine milk with eggs.

  6. Strain twice.

  7. Rest 5 mins, skim bubbles.

  8. Pop into your tin or ramekin.

  9. Cover with foil

  10. Place into a baking tray half way filled with water

  11. Convention oven at 140 for 35-55mins depending if you are using a tin or ramekin.

  12. Check if it’s down by removing the foil and having a peek it should be wobbly not fully set or liquid.

  13. Then remove and leave to chill in the fridge for like 4 hours
