Cook sugar + water to deep amber caramel.
Pour thin layer into tin or 6 ramekins
Warm milk + condensed milk until steaming.
Gently whisk eggs, yolks, vanilla, salt.
Slowly combine milk with eggs.
Strain twice.
Rest 5 mins, skim bubbles.
Pop into your tin or ramekin.
Cover with foil
Place into a baking tray half way filled with water
Convention oven at 140 for 35-55mins depending if you are using a tin or ramekin.
Check if it’s down by removing the foil and having a peek it should be wobbly not fully set or liquid.
Then remove and leave to chill in the fridge for like 4 hours
