Sauté leeks in butter on medium heat, season with fine salt
When leeks have softened slightly, add crushed garlic and fry for 30 seconds
Add 1 tbsp flour and 1 tsp thyme, cook out flour for 1 minute
Add double cream and chicken stock, season with black pepper, and bring up to boil until bubbling
Add roast chicken pieces and allow to heat through for a few minutes
Place in baking dish, top with filo pastry, and brush with butter
Cook pie at 180°C for about 10 minutes according to filo instructions
Serve with a vegetable side of choice
