Leftover Roast Chicken And Leek Pie
  1. Sauté leeks in butter on medium heat, season with fine salt

  2. When leeks have softened slightly, add crushed garlic and fry for 30 seconds

  3. Add 1 tbsp flour and 1 tsp thyme, cook out flour for 1 minute

  4. Add double cream and chicken stock, season with black pepper, and bring up to boil until bubbling

  5. Add roast chicken pieces and allow to heat through for a few minutes

  6. Place in baking dish, top with filo pastry, and brush with butter

  7. Cook pie at 180°C for about 10 minutes according to filo instructions

  8. Serve with a vegetable side of choice
