No-bake Date Cookies
  1. Add ½ cup of oats to a dry blender and blend until it becomes a flour. Empty into a separate bowl.

  2. Add 8 pitted dates to a food processor and blend on high.

  3. Add in the peanut butter, vanilla extract, salt, and maple syrup to the food processor and blend on high. Scrape the sides, and continue to blend until it has a clay-like consistency.

  4. Add in ¼ cup of the oat flour, mix until it is fully combined!

  5. Scoop with a spoon and shape into a disc. Refrigerate until they are chilled.

  6. Melt down the chocolate chips in a heat-safe bowl over boiling water.

  7. Top your cookies with a dollop of chocolate and spread.

  8. Sprinkle a small pinch of flaky sea salt over the cookies.

  9. Let them cool and serve!
