Ricotta cheesecake
  1. Pass the ricotta cheese through a sieve, so to make it more “airy”.

  2. Chop the chocolate in small pieces or flakes. Not too much big. The size of a peanut is fine.

  3. In a cup, beat a little the eggs with the sugar.

  4. Add everything together in a bowl, and mix it well.

  5. Put the dough in a cake pan, and makes some holes with a fork.

  6. Cook the bottom for 10-15 mins at 180°C.

  7. Add the ricotta mixture over it. Cook it for further 20-30 mins.

  8. Let it cool down before eating it.

  9. Keep conserved in the fridge.
