Banana Oat Breakfast Cookies

    Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment.

  2. Mix all ingredients in a bowl.

  3. Scoop into 2-tablespoon mounds and flatten slightly.

  4. Bake for 12–15 minutes until set and lightly golden.

These are chewy, hearty, and naturally gluten-free (if using GF oats).
