Ingredients:
2 lb beef tenderloin roast
Salt and pepper to taste
4 tablespoons herb butter (mix of butter, garlic, rosemary, and thyme)
2 tablespoons olive oil
1 tablespoon Dijon mustard
Fresh herbs for garnish (optional)
Directions:
Preheat the Oven: Preheat your oven to 425°F (220°C).
Prepare the Roast: Season the tenderloin generously with salt and pepper. In a skillet, heat olive oil over high heat. Sear the roast on all sides until browned, about 3-4 minutes per side.
Add Herb Butter: Brush the roast with Dijon mustard and top with herb butter. Transfer to the oven and roast for 25-30 minutes for medium-rare.
Rest and Serve: Remove from the oven and let rest for 10 minutes before slicing. Garnish with fresh herbs and serve.
