Chocolate Chip Pumpkin Bread
  1. Preheat your oven to 350°F. In a large bowl, combine the flour, pumpkin pie spice, salt and baking soda.

  2. In another bowl, beat the eggs, sugar, honey, pumpkin, and oil. Stir the wet ingredients into the dry ingredients just until moistened. Fold in the chocolate chips.

  3. Pour the batter evenly into 2 greased 8x4-inch loaf pans (or 3, if you want smaller portions). Bake for 60 to 70 minutes or until a toothpick inserted in the center comes out clean.

  4. Let the bread cool for 10 minutes, then transfer to wire racks to continue cooling.
