Preheat oven to 180°C fan and lightly grease the 30cm roasting tin
In the mixing bowl combine the wet ingredients
With the mixer running on low and the splash shield attached, add the dry ingredients
Leave the mixer running until the ingredients are fully combined and the mixture is smooth
Pour into the tin
Mix together the sugar, coffee and cornflour then sprinkle over the top of the cake mixture
Cover with boiling water by pouring over the back of the spoon to stop the mixture breaking
Bake for 35-40 minutes
Allow to cool for 10-15 minutes before serving with ice cream
