Render bacon until browned, remove from pan
Season chicken and sear on both sides until golden brown
Remove chicken
Add shallot and mushrooms, cook until browned
Add garlic and cook 1 more minute
Add wine and bacon, stir until mixed well
Add chicken, cover and simmer for 1 hour
Remove chicken, add cream, stir and reduce by ¼
Add coated butter and stir in, cook 3 minutes
Finish with parsley, season to taste
Serve with pomme purée
