  1. Render bacon until browned, remove from pan

  2. Season chicken and sear on both sides until golden brown

  3. Remove chicken

  4. Add shallot and mushrooms, cook until browned

  5. Add garlic and cook 1 more minute

  6. Add wine and bacon, stir until mixed well

  7. Add chicken, cover and simmer for 1 hour

  8. Remove chicken, add cream, stir and reduce by ¼

  9. Add coated butter and stir in, cook 3 minutes

  10. Finish with parsley, season to taste

  11. Serve with pomme purée
