Focaccia Muffins
  1. In a large mixing bowl, whisk together 1 tsp of instant yeast, ½ cup of warm water, and 1 tsp of sugar.

  2. Then, mix in 2 & ½ cups of all purpose flour, 1 cup of water, 1 tsp of salt, and 2 tbsp of olive oil until a dough forms.

  3. Cover with a kitchen towel and let rise somewhere warm for an hour, or until doubled in size.

  4. Grab a muffin pan and drizzle a little olive oil in each spot.

  5. Divide the dough into the muffin pan, about 3 tbsp worth of dough in each one.

  6. Preheat your oven to 425F and place the muffin tin on top of the oven where it's warm for 10 minutes, to let it rise slightly once more.

  7. Drizzle some more olive oil on the dough, dimple, and top with flaky salt.

  8. Bake for 20 minutes, or until they are golden brown.

  9. Top with more olive oil and fresh grated parm.
