Chickpea Tortilla -no Egg
  1. Whisk the chickpea flour, water, spices together and nutritional yeast together. You can use a food processor for this. Then stir in the grated courgette.

  2. Allow to sit for around 60 minutes, if possible, to thicken.

  3. Heat the extra virgin olive oil in a small pancake pan and add the onion. Sauté for around 2 minutes before adding the potato. Keep the mixture moving for around 3-4 minutes until the potato begins to soften. Save half for your second tortilla.

  4. Pour in half of your batter and do not stir any more. Turn the heat down to medium, so as not to burn the base and put a lid on the frying pan to create some steam.

  5. Leave for around 10 minutes until the mixture is beginning to look quite set.

  6. Flip the tortilla with a fish slice and cook the other side for another 5-8 minutes, or until golden and cooked through. Repeat with the other half of the batter.
