Add all ingredients into a blender or stir together in a bowl. You want the consistency of the batter to be slightly thick, not completely pureed. Only pulsing once or twice in the blender worked well for me. If consistency is too thin, add ¼ cup more sweetpotato until desired thicker consistency is reached.
Thoroughly grease and heat your cast-iron skillet or pan prior to putting batter in the pan.
Watch closely and flip after 2-3minutes. Cook for an additional 2-3 minutes until the other side is cooked through.
Serve with your desired topping or plain!
