Heat olive oil in a large pan and sauté finely diced onions until softened
Add ground beef and cook until browned
Stir in tomato paste and cook for 1-2 minutes
Add beef bone broth and marinara or crushed tomatoes
Season with salt, black pepper, garlic powder, Italian seasoning, and red chili flakes to taste
Optional: add white miso for depth of flavor
Simmer meat sauce until thickened
Boil lasagna noodles until just tender and drain
In a bowl, combine cottage cheese, eggs, shredded mozzarella, grated parmesan, parsley, salt, and garlic powder
In a 15x11x3 roasting pan, layer as follows: thin layer of meat sauce, noodles, cheese filling, meat sauce, noodles, cheese sauce, meat sauce, noodles, meat sauce
Top with shredded mozzarella and Parmigiano Reggiano
Cover with foil and bake at 375°F for approximately 40 minutes
Remove foil and broil for 10-15 minutes until cheese is bubbly and golden brown
Let lasagna rest for 15-20 minutes before slicing into 10 pieces
