Tomato Mascarpone Pasta
  1. Fry diced shallots in olive oil for 4-5 minutes

  2. Add minced garlic and fry for another minute

  3. Add the white wine and let it bubble for a minute

  4. Add the passata and bring to a gentle boil

  5. Simmer for 5-10 minutes

  6. Add the mascarpone and mix through

  7. Add the basil, parmesan and black pepper

  8. Simmer for 10 minutes

  9. Serve on pasta
