Fry diced shallots in olive oil for 4-5 minutes
Add minced garlic and fry for another minute
Add the white wine and let it bubble for a minute
Add the passata and bring to a gentle boil
Simmer for 5-10 minutes
Add the mascarpone and mix through
Add the basil, parmesan and black pepper
Simmer for 10 minutes
Serve on pasta
