Smokey Paprika Sage Chicken Patties
  1. Squeeze all the liquid out of the grated zucchini using a cheesecloth.

  2. In a bowl, combine the minced chicken, grated zucchini, grated carrot, and all the spices and herbs.

  3. Add the egg and panko bread crumbs to the mixture and mix until well combined.

  4. Form the mixture into patties and place them on a parchment-lined tray.

  5. Freeze the patties for at least 20 minutes to help them hold their shape.

  6. To cook, heat ghee in a pan over medium-high heat, add the patties, cover, and cook for 5-6 minutes.

  7. Remove the lid, reduce heat to medium, and cook for an additional 2 minutes per side until golden brown.

  8. Serve with your choice of sides or in a bun.
