In a bowl add all purpose flour, baking powder, cinnamon, zero calorie sweetener & mix well.
Add an egg, low fat milk & mix well until you have a thick pancake batter (add more milk if needed)
Spray a pan with light cooking oil spray, evenly distribute the batter into two seperate silicone egg rings with some a drizzle of sugar free maple syrup on top. Place a lid on the pan & cook for 3 - 5 minutes on medium heat or until you see bubbles at the top then flip & cook again. Repeat this process until you have 12 pancakes.
In a seperate bowl add extra lean beef mince with the seasonings, mix well & form 6 equal balls.
To a pan add the mince ball, flatten & cook on medium - high heat for 2 minutes on each side.
In a seperate bowl mix together 6 eggs with blended cottage cheese (this step boosts the protein & also makes the eggs fluffier)
To a small pan add a thin layer of the egg mixture, once it's cooked fold the edges towards the middle to create an egg pocket. Repeat the process to make 6 egg pockets in total.
Assemble each McGriddle by adding a slice of cheddar cheese on one pancake followed by a mince patty, one egg pocket & another pancake on top.
