Stir cottage cheese and eggs until smooth
Mix in flour, baking powder, and salt
Fold in cheddar cheese and add garlic or herbs if using
Scoop 6 equal portions onto the tray and shape gently into rounds without flattening too much
Bake for 14–18 minutes until biscuits rise and tops turn lightly golden
Rest for 3 minutes, then serve warm
