Fermented Pickled Beets
  1. Cut beets into thin matchsticks

  2. Thinly slice the onion

  3. Peel and thinly slice the fresh ginger

  4. Combine beets, onion, and ginger in a jar

  5. Mix filtered water with sea salt or kosher salt

  6. Pour brine over vegetables

  7. Add minced garlic if desired

  8. Allow to ferment at room temperature for several days until desired tanginess is reached

  9. Transfer to refrigerator for storage

  10. Keep refrigerated for months, flavor improves with time
