Cut beets into thin matchsticks
Thinly slice the onion
Peel and thinly slice the fresh ginger
Combine beets, onion, and ginger in a jar
Mix filtered water with sea salt or kosher salt
Pour brine over vegetables
Add minced garlic if desired
Allow to ferment at room temperature for several days until desired tanginess is reached
Transfer to refrigerator for storage
Keep refrigerated for months, flavor improves with time
