  1. Peel the onion, garlic and ginger

  2. Remove the ends from the chillis

  3. Bash the lemongrass, trim, and remove the tough outer leaves

  4. Add to a blender with the coriander, fish sauce, soy sauce and oil

  5. Blend until smooth

  6. Use in any curry recipe
