Brown Butter Apple Coffee Cake Loaf
  1. Preheat oven to 350°F. Line a 9x5 loaf pan with parchment.

  2. Brown butter over medium heat, stirring until foamy, golden and nutty. Pour into a bowl; cool.

  3. Melt 1 tbsp butter in a skillet. Add apples, brown sugar, cinnamon and salt. Cook 3-5 min until glossy and softened; cool. If there's lots of liquid, remove apples and simmer liquid until thickened, then add back.

  4. Mix cinnamon swirl ingredients.

  5. Mix streusel ingredients until crumbly.

  6. Whisk flour, baking powder, baking soda, cinnamon, nutmeg and salt. Whisk sugar into cooled brown butter, then eggs one at a time and vanilla.

  7. Mix in ½ dry ingredients, then ½ yogurt; repeat, mixing just until combined.

  8. Spread ½ batter in pan. Dollop cinnamon swirl over top and add ½ apples. Run a knife through once or twice. Top with remaining batter, apples and streusel.

  9. Bake 55-70 min, until a toothpick comes out with moist crumbs but no wet batter. Tent with foil if browning too quickly. Cool in pan 15-20 min, then transfer to a rack.

  10. For glaze, whisk powdered sugar, vanilla bean paste, pinch salt and 1½-2 tbsp milk.
