Preheat cast iron skillet on medium high
Crumble sausage into skillet and cook until nearly all pink is gone. Do not get too overdone or crispy. (Approx 3-5 min)
Mix flour into skillet and stir until all sausage is coated.
Turn heat down to medium/medium low
While stirring, pour in the milk. Increase the heat to medium-high. Once the mixture boils and thickens, reduce the heat to medium-low. Add the seasoned salt, black pepper, and sage or thyme, if using, and let it simmer for 3 to 10 minutes, stirring occasionally, until thickened., scraping little bits.
Serve over biscuits or as a sauce for breakfast pizza
