Nizami Chicken Curry
  1. Heat oil in a pan and brown the onions. Remove and set aside.

  2. In the same pan, add ginger-garlic paste and sauté for 1–2 minutes. Add chicken and sauté for 2 minutes. Reduce the flame to low.

  3. Grind yogurt, fried onions, coriander leaves, cashews/almonds, and coconut into a smooth paste.

  4. Add the paste to the chicken. Then add water, saffron milk, ghee (if using), green chilies, and all the spices: chili powder, coriander powder, turmeric, cumin powder, garam masala, and pepper powder. Mix well.

  5. Cover and cook on low heat for 15–20 minutes until chicken is cooked through and flavors are well blended.

  6. Top with fried onions, green chilies, and coriander leaves before serving.
