Grab a large mixing bowl and mix together 1 cup of warm water, 1 tsp of yeast, and 2 tsp of cane sugar.
Then, mix in 1 & ¾ cups of all purpose flour and ¼ tsp of salt until a dough forms.
Cover and let rise for an hour somewhere warm. It will almost double in size.
While it's rising, mix together the brown butter chocolate chip cookie dough. First, mix together ½ cup of brown butter, ¾ cup of brown sugar, 2 tbsp of granulated sugar, 1 egg yolk, and 1 tsp of vanilla. Then, mix in 1 cup of all purpose flour, ½ tsp of baking powder, and ¼ tsp of salt. Fold in ½ cup of dark chocolate chips. Refrigerate until the focaccia dough is ready.
Once the focaccia dough has risen, transfer it to a floured surface and flatten into a ½ inch thick rectangle. Scoop cookie dough, 1 tbsp at a time, onto the dough. Fold the focaccia dough around the cookie dough.
Then, grab a mini 5" cast iron skillet. Coat the skillet in melted butter to avoid the dough from sticking. Transfer the dough to the skillet.
Preheat your oven to 400F. Place the skillet on top of the oven to rise once more.
Once the oven is preheated. Dimple the dough, scoop more cookie dough on top, and sprinkle with sugar.
Transfer to the oven. Bake for 20-25 minutes. And then broil for 3-5 minutes to get the top all crusty and golden! Keep an eye on the bread whiles it's on broil because it will burn fast.
Brush with melted butter and enjoy!!
