  1. In a bowl, combine blanched almond meal with shredded coconut and sweetener.

  2. Add mascarpone cheese, vanilla and coconut extract and combine with a spoon or spatula.

  3. Form 12 balls with your hands and in each ball press in 1 almond and form nicely shaped ball with your hands.

  4. In a plate put shredded coconut for coating and coat each ball in coconut.

  5. Leave it in the fridge for at least 30 minutes before serving.
