Put your roasted veggies into a heatproof dish which fits inside your air fryer.
Whisk the eggs and herbs with some salt and pepper.
Crumble half the feta over the roasted veggies.
Pour half the egg mixture into the dish, add the rest of the feta.
Place the dish in the air fryer basket and top up with the remaining egg.
Cook for 12 mins at 180C, checking for doneness by inserting a knife into the center.
If any raw egg appears, return it to the air fryer for another 2-3 mins.
Let it cool for a few mins before serving.
