Using a sharp paring knife, cut a small deep slit into the narrow side of the pork chop, creating a pocket inside the meat. Be careful not to poke through to the surface of the meat.
Add a mixture of cheese and bacon to each pocket, using as much as will fit. Hold the opening shut by securing with toothpicks.
Mix together honey, Worcestershire, and oil in a small dish.
Season each chop with salt and pepper then brush liberally with honey mixture.
Place over hottest part of the grill and cook ~4 minutes per side.
If you love your pork medium rare, you should cook it to an internal temperature of 145 degrees (followed by a three-minute rest). If you like your chops a little more done, you can cook them to an internal temperature of 160 degrees.
