Healthy Tahini Chocolate Chip Cookies
  1. Preheat oven to 350°F and line a baking sheet with parchment paper

  2. In a large bowl, mix tahini, maple syrup and vanilla until combined

  3. Add in the oats, almond flour, salt, cinnamon, dates and chocolate and mix together

  4. Let the mixture sit for 10 minutes to thicken. If needed, add more almond flour 1 tablespoon at a time

  5. Scoop the batter onto the lined baking sheet and flatten each cookie slightly with your hand

  6. Bake for 10-12 minutes until the middle is still slightly raw

  7. Cool on a wire rack. The cookies will become chewy and gooey in the middle as they cool

  8. Optional: sprinkle with sea salt before serving
