Seasoned Ground Beef

  1. Cook onion and garlic until softened. Add beef, cook until browned.

  2. Stir in spices and tomato paste, cook 1–2 minutes. Add broth, simmer until thick.

  3. Remove half the beef. Add peppers and corn to the remaining beef, cook 2–3 minutes.

Crispy Cheesy Beef Pockets

  1. Lightly dip tortillas in water, cut in half.

  2. Layer cheese, plain beef, cheese, fold into triangles.

  3. Brush with melted butter mixed with garlic and parsley. Place seam-side down.

  4. Bake at 400°F for 15–20 minutes, then broil for 2–3 minutes until crispy.

Loaded Sweet Potatoes

  1. Halve sweet potatoes, drizzle with olive oil and salt. Place cut-side down.

  2. Roast at 425°F for 35–45 minutes until tender and caramelized.

  3. Mix sauce: ⅓ cup yogurt, ¼ cup mayo, ¼ tsp chipotle, 1 garlic clove, ½ tsp salt, 2–3 tbsp water.

  4. Flip potatoes. Spread with sauce, top with seasoned beef (from step 3), avocado, crushed chips, and parsley.

Lemon Chicken Skewers

  1. Marinate chicken in olive oil, white wine, lemon juice, bouillon, salt, and pepper for 1 hour.

  2. Combine Parmesan, panko, breadcrumbs, garlic powder, oregano, red pepper flakes, salt, and pepper.

  3. Toss marinated chicken in breading mixture. Thread onto skewers.

  4. Grill over medium-high heat for 4–5 minutes per side, or bake until cooked through.

  5. Brush with melted butter mixed with lemon juice before serving.
